For me, cooking is about love and bringing joy to the people who eat my food. Pâtisserie especially, in all its theatre and fine craftsmanship, its contrasting flavours and textures, has the power to conjure smiles, laughter and even a sense of wonder. It is my trade, my art and my passion.
I live in rural Suffolk where, whenever possible, I cook with local ingredients, combining them with the classical techniques honed during my years working as a pastry chef in a range of award-winning kitchens, including The Lanesborough Hotel, London. The results are refined and beautiful, enriched with the wholesome goodness of the countryside.
My products can be bespoke- made to order and are sold at Farmers Markets in Suffolk, Cafe 1885 and I also run pop up Patisseries and classes. Please contact me for information.
We visited Henrietta at Snape Maltings Farmers Market after seeing her sumptuous Facebook page and was not disappointed. Her ingredients are intelligent, playful and sublime. There is nothing gimmicky about her products - they show her classical training and mastery of classical French technique and manage to marry ingredients and methodology from world cuisines too.
We have eaten Macarons from Pierre Herme and whilst Henrietta's reflect the clever combinations found in them, hers tasted better to us. They were less grainy, flavours retained their separate integrity and seemed Feminine without being girly. Macarons scented and infused with Lime (Proustian!), Marmalade, Lemon and Coconut yoghurt were eyerollingly good. Mini versions of custard cream biscuits were pure vanilla infused eggy creamy loveliness too.
We intend to go back to gobble up much more of these gorgeous products and in the meantime plan to get our fix via her website and instagram.
